If you?re struggling to know what to do with your left over pumpkin below is a tasty recipe for:
Pumpkin, Tomato and Pepper SoupPumpkin, 1 red pepper, 4 tomatoes, 1 chilli, 1 onion, 2 cloves of garlic, 1 pint vegetable stock
Chop up all the vegetables (except onion and garlic) and roast in the oven for half an hour.
Meanwhile fry off the onion and garlic in a large saucepan.
Take vegetables out of oven and skin the tomatoes ? add everything to the pan along with the stock and simmer, adding salt and pepper to taste, add more water if necessary.
After about half an hour leave to cool ? when cool blend the soup and reheat to enjoy.
A simple but tasty soup for a cold Autumn evening!
